Artisanal methods of preservation are time-consuming but safe and healthy. White lemon pickle is one such labour of love. The white lemons are boiled till the skin is about to crack. Right before the peel cracks, the lemons are removed from the water and dried completely under the sun. Sesame oil, birds eye chilli fermented in vinegar, spices, julienned ginger, curry leaves and naturally fermented vinegar are combined with the sun-dried lemons to conjure this tangy and delicious pickle.
